Rosa Prati works at Caviro SCA since 2003. She is now Unit director for Food Quality and Safety, Quality Check, Research and Development and GMP. CAVIRO was established in Faenza (RA) in 1966 by a group of cooperative wineries from the Romagna area, which strongly felt the need to find use for the by-products of wine making. In order to meet the needs of an ever-increasing membership base, the Cooperative has constantly expanded and strengthened its structures, which however require further updates and cutting-edge technology innovations.
CAVIRO DISTILLERIE SRL was established in 2007 and is managed and co-ordinated by CAVIRO SCA. With this act, all of the activities performed in the Caviro Group Faenza establishment (distillation, processing wine-making by-products, production of energy from biomasses, processing alcohol-based semi-finished products, composting), are transferred from Caviro SCA to the newly formed Caviro Distillerie Srl. This operation was technically carried out through the transfer of the branch of the business already known as "Distilleries", a division of Caviro SCA.
With a 100 million Euro investment in sustainability initiatives since 2009, Caviro, the main agricultural cooperative in Italy with 13,000 winemakers, continues to lead the development of a circular economy that turns waste into resources. To reach this goal, Caviro has created a new value in each sector, from the by-products of vine growing to wine production.
The Group, which currently employs 547 people in 4 different production sites and reported sales of 3154 million Euro in 2017, has created four virtuous cycles which focus on four areas: the extraction of Polyphenols from grape seeds, Oenocyanin and Tartaric acid; energy self sufficiency and the use of renewable energy; wastewater recovery and the creation of compost, which is also used for organic farming.
